Miso Cucumber Salad with Shallot & Roasted Peanuts
This refreshing salad combines crisp cucumber with a rich miso dressing, accented by the crunch of roasted peanuts and the sharpness of shallots. It’s a perfect side dish or light meal, balancing salty, tangy, and umami flavours.
Ingredients:
- 2 cucumbers, thinly sliced
- 1 shallot, finely sliced
- 1/4 cup roasted peanuts, roughly chopped
- 2 tablespoons miso paste
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon honey
- 1/4 cup fresh coriander leaves
Method:
