Baked Halibut with Meyer Lemon Fennel Salsa

This baked halibut with Meyer lemon fennel salsa is a light, refreshing dish that’s perfect for any occasion. The sweet, tangy Meyer lemon pairs beautifully with the delicate flavour of fennel, adding a bright contrast to the flaky, tender halibut.

Ingredients:

  • 4 halibut fillets (about 150g each)
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 lemon, sliced for garnish

Meyer Lemon Fennel Salsa:

  • 1 Meyer lemon, peeled and finely diced
  • 1 small fennel bulb, finely chopped
  • 1 small red onion, finely diced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp olive oil
  • 1 tbsp white wine vinegar
  • Salt and pepper, to taste

Method:

  1. Preheat the oven to 180°C (fan-forced).
  2. Lightly grease a baking dish with olive oil and place the halibut fillets in the dish. Drizzle with olive oil and season with salt and pepper.
  3. Bake the halibut for 12–15 minutes, or until the fish flakes easily with a fork.
  4. While the halibut is baking, prepare the salsa. In a bowl, combine the diced Meyer lemon, chopped fennel, red onion, parsley, olive oil, and white wine vinegar. Season with salt and pepper to taste.
  5. Once the halibut is cooked, remove from the oven and top with the Meyer lemon fennel salsa.

Serve with lemon slices and enjoy this fresh, vibrant dish that’s perfect for a healthy weeknight meal or a light dinner party option.
